Miso Butter Beans
If you’re not already a beans lover, this recipe will convert you! The miso provides a wonderful salty depth and the butter makes everything creamy and delicious! Try to use the best beans you can find as this will really make a difference.
Miso Butter Beans
Serves: 2
Ingredients
- Knob of butter
- 3 spring onions or 1 baby leek, sliced
- 2 garlic cloves, minced
- 400g jar or tin of butter beans
- 150ml vegetable or chicken stock
- 1 tbsp white miso paste, dissolved in 2 tbsp hot water
- Juice of 1/2 lemon
- Big handful of spinach, roughly chopped
Instructions
- Add a knob of butter and drizzle of olive oil to a saucepan. Then add the spring onions/leek and garlic. Fry until softened and slightly golden.
- Add the beans to the saucepan (with the liquid they are in). Fry for a minute.
- Add the stock and bring everything to a simmer. Add the miso liquid.
- Simmer the beans for a few minutes until the sauce thickens and reduces slightly.
- Add the lemon juice and lots of black pepper.
- I like to stir through a big handful of spinach for the last minute until just wilted for a boost of greens.
- Serve the beans with a slice of sourdough toast to soak up the miso liquid and beans - enjoy!
