Chicken Lettuce Wraps

Inspired by PF Chang’s Chicken Lettuce Wraps, these are a delicious and healthy lunch or dinner. The chicken filling keeps well in the fridge and can be used in other dishes.

Ingredients

  • 1 lb minced chicken
  • 3 garlic cloves, minced
  • Big knob of ginger, minced
  • 5 tbsp hoisin sauce
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp sriracha
  • 1 tbsp sesame oil
  • Pinch of black pepper
  • 1 tin of water chestnuts (~140g drained), chopped
  • 3 spring onions, sliced (save the green parts for the topping)
  • A handful of fresh coriander, chopped
  • Lettuce cups (I used little gem)

Instructions

  1. Add a drizzle of oil to a pan on medium heat. When the oil is hot, add the minced chicken with garlic and ginger and cook for a few minutes.
  2. Add the sauce ingredients and cook until the chicken gets caramelised.
  3. Then add the water chestnuts, spring onions and coriander. Cook for another 2 minutes.
  4. Spoon into lettuce cups and top with peanuts and the green parts of the spring onions - enjoy!
