Onigirazu
Onigirazu is essentially a sushi sandwich. It’s a great, quick lunch as you can fill it with anything you like (including leftovers) and it’s much easier to make than regular sushi!

Ingredients
- Sushi nori (seaweed)
- Sushi rice
- Cucumber, sliced
- Tuna mixed with kewpie mayo, lemon juice, soy sauce
- Avocado, sliced
- Spring onion, sliced
- Sesame seeds
Instructions
- Lay down a large piece of cling film.
- Top with a square of nori. Add a few spoonfuls of sushi rice to the centre of the nori sheet and press into a square (leaving a large border).
- Top with cucumber slices, the tuna mayo mixture, and sliced avocado.
- Top with another thin layer of sushi rice and sprinkle over the spring onion and sesame seeds.
- Cut a piece of nori into a diamond shape and use it to cover the filling.
- Fold the corners of the bottom sheet of nori over the top sheet to seal the filling in.
- Wrap tightly with cling film - this helps everything stay together.
- After a few minutes, unwrap the onigirazu, cut in half and enjoy!
