3 Ingredient Spinach Wraps
These are delicious high protein, low carb wraps made with spinach, eggs and cottage cheese. You can switch up the fillings and they make the perfect healthy lunch.

Ingredients
Spinach Wraps
- 1 packed cup fresh spinach
- 2 eggs
- 2 tbsp cottage cheese (full fat)
- Pinch of salt and pepper
Tuna Salad
- Tuna (I use tuna fillets in olive oil from Ortiz)
- Mayo (I use Kewpie or homemade)
- Lemon juice
- Fresh jalapeño, finely chopped
- Fresh dill, finely chopped
- Spring onions, finely chopped
- Pinch of salt & pepper
Instructions
Spinach Wraps
- Blend the ingredients for the wrap together.
- Pour 1/2 or 1/3 of the mixture (depending on the size of the pan) into a lightly oiled pan on medium heat and cook for a couple of minutes on each side until set and slightly golden.
- Repeat with the rest of the mixture.
- Top the wraps with the fillings, season with salt & pepper and enjoy!
Tuna Salad
- I didn’t measure the ingredients as it really depends on how much mayo you like etc. but I used roughly 200g tuna, 4 tbsp mayo, juice of 1/2 small lemon, 1 fresh jalapeño, a small handful of dill, 2 spring onions, pinch of salt & pepper.
