Bircher Muesli
My mum has been making this for breakfast recently and I am obsessed - although it’s served chilled there’s something so comforting about the creamy oats and I love playing around with the toppings. It keeps in the fridge for a couple of days so it’s a great one to make on a Sunday evening ahead of a busy week!
Bircher Muesli
Serves: 2
Ingredients
- 100g porridge oats (my mum uses the 5 grain 5 seed porridge mix from Rude Health)
- 130ml milk
- 50ml apple juice
- 75ml yoghurt
- A squeeze of lemon juice
- Pinch of salt
- A squeeze of honey (to taste)
- 30g raisins
- 1 small Granny Smith apple, grated
- Toppings: I love blackberries, pistachios and toasted coconut flakes. I also sometimes sprinkle over milled flaxseeds or chia seeds for an extra boost of goodness!
Instructions
- Add all of the ingredients to a bowl and stir together.
- Leave in the fridge overnight and enjoy for breakfast with whatever toppings you fancy!
